Burrata and ovoline are varieties of fresh cheese that are made from cow’s milk.  

On inspection, both cheeses may look alike, however they are actually quite different. 

The exterior of these cheeses is made up of the same content, but the difference can be found in the interior of the cheese.  

So, what’s the difference between ovoline and burrata?  

Unlike ovoline, which is more solid, burrata contains a cavity that is filled with curds and cream.

What is burrata?

Burrata is a type of fresh cheese that hails from southern Italy and has its origin dating back to the early 20th century.  

Compared to mozzarella cheese, burrata is a relatively younger addition to the world of cheeses.  

This fresh cheese is exclusively made from the milk of cows, and its name is derived from the Italian word “burro,” which means butter. 

In terms of appearance, burrata has a soft texture and is ball-shaped, closely resembling fresh mozzarella cheese. 

 Its shell is made up of the same content as mozzarella cheese, and it can easily be mistaken for mozzarella.  

The flavor of burrata is comparable to mozzarella cheese, but the key distinction lies in its interior.  

Burrata features a unique cavity that is filled with a combination of cheese curds and cream.  

The interior is notably softer than mozzarella, adding a delightful creaminess to its overall texture. 

Burrata is commonly used in pizza and pasta, where its creamy interior adds a richness to these dishes. 

Additionally, burrata can be used to make a classic caprese salad or simply enjoyed with bread alongside a drizzle of olive oil. 

What is ovoline?

Ovoline is a specific type of mozzarella cheese. 

It takes on an egg-shaped form and is smaller than regular fresh mozzarella cheese.  

This cheese, roughly the size of an egg and weighing around four ounces, possesses a mild flavor and a smooth texture. 

Sold packed together with its own brine, ovoline is a versatile cheese that can be used in various culinary applications. 

It can be melted and used in dishes like lasagna or pizza, contributing its unique flavor and texture to the overall dish.  

Additionally, ovoline can be fried to achieve a delightful crispiness, making it a versatile ingredient in the kitchen.  

It also finds a place in salads, adding a mild and creamy element to the mix. 

Differences between ovoline and burrata


Burrata has a unique interior composition that includes a cavity filled with a combination of cheese curds and cream. This distinctive feature sets it apart from other fresh cheeses. 

On the other hand, ovoline lacks the characteristic cavity found in burrata. It is more solid in structure, resembling traditional mozzarella cheese without the creamy center. 

The creamy interior also elevates the flavor of burrata.

Shape and size

Ovoline takes on an egg-shaped form, distinguishing it from the rounded shape of burrata.  

It is also smaller in size compared to burrata. 


The interior of burrata is notably softer than traditional mozzarella, due to the inclusion of cheese curds and cream.  

This creates a creamy texture that distinguishes it from ovoline which has a more consistent and solid texture throughout.
